Batch 1 of single malt Scotch whisky from the new kid on the Islay block, Kilchoman, bottled by That Boutique-y Whisky Company. But what’s this? It seems that the new kid is schooling us on barley production, dropping science with diagrams on that chalkboard about what goes into their whiskies.
You see, Kilchoman is a farm distillery that grows 30% of the grain used in its whisky. But you can’t just roll up to a field with a bag of random seeds, start throwing them around and expect a good harvest.
You need to know what’s good. You need to know what’s going to survive the Scottish weather. You need science, and Kilchoman has that all wrapped up.
Kilchoman originally used optic barley, but like all scientists, they improved on their hypothesis and now use publican barley, which stands strong in the face of the wild winds of Islay. Yeah Kilchoman! Yeah science!
