Winning bid: £30

Built to provide whisky for the Teacher's blend in 1898, this Highlander's main production is a peated whisky, but there is also a non-peated version called Ardlair (Ardless is its nickname) which accounts for around 40% of its output.

Signatory was founded by Andrew Symington in 1999. After discovering single cask single malt whisky while managing Prestonfield House Hotel, Andrew bought his first cask, a Glenlivet 1968, and is now one of the largest independent bottlers in Scotland. As of 2002, Signatory Vintage Whisky company is also the owner of the Edradour distillery.

Bottled at 40% ABV with no chill-filtering, this Ardmore 2008 offering is naturally cloudy. Made from two bourbon barrels, this rich, peated and oily single malt is highly perfumed.
