An intriguing experiment from Italian bottlers Samaroli, and produced in very limited batches. The Evolution project was started in 1992 by Silvano Samaroli with the aim of maintaining the flavours of the whiskies he loves from the 50s and 60s, while blending them with younger malts to add body and presumably help bring the resulting dram into the price range of mere mortals.
Initially 20 different casks were vatted for 6 months, then the resulting liquid was refilled into entirely new casks. Half of these were Sherry casks and the other half virgin American white oak. These casks were periodically sampled by Mr Samaroli, and whenever he felt that something was needed to further balance the cuvee they were re-vatted and additional casks were added. This process is still ongoing, hence "Evolution"...
