The seeds were sown for Bimber three generations ago in communist-era Poland, where Darius, the founder and master distiller’s grandfather, distilled his own spirits, known as moonshine. After emigrating from Poland and founding the company in 2015 and laying down their first casks in 2016, they have in 2019 released one of the first single malts to be produced in London in over a century.
