When a cask is resting, the amount of alcohol which evaporates during maturation can be around 2% per year. It can be much higher in warmer climates. In Scotland we call this evaporation the 'Angels Share', in the Caribbean they call it the 'Duppy Share'. Duppy is a word of African origin meaning ghost or spirit. The same expression is used in both Barbados and Jamaica and it is believed that the Duppy spirits take only the best share of the rums.
