Redbreast is an Irish single pot still whiskey, which started out in the early 1900's. Produced in Dublin by W & A Gilbey; a wine merchant and bonder who received their spirit from the famous Bow Street Distillery (home of Jameson's whiskey). The whiskey takes its name from one of Gilbey's chairmen, nicknamed "Redbreast" due to his penchant for bird watching.

Production moved from Dublin to Cork when the Bow Street distillery closed its doors in 1971, but was halted in 1985, and a year later the brand was sold to Irish Distillers. Under their ownership Redbreast made a triumphant return to the market in 1991, and has gone onto win several awards.

This expression was created thanks to a long-standing friendship between the Lustau Bodegas and Irish distillers. Aged for between nine to twelve years in a combination of Bourbon and refill Oloroso Sherry barrels, before being transferred for another year of maturation into a Lustau Oloroso Sherry cask.
