Another disclaimer here from the SWA team, we're certainly no experts when it comes to Shochu! As Japan's other indigenous drink, the main difference between Sake and Shochu is that Shochu is distilled.
This spirit was traditionally produced from sweet potatoes on the Island of KyÅ«shÅ«, particularly in Kagoshima as in this case. These days it is widely produced across all of Japan using locally grown sweet potatoes. Some say that potato shÅchÅ« is a bit smoky; evocative of some peated whiskies.
