Del Maguey Mezcal Iberico

So this type of Mezcal comes from the village of Santa Catarina Minas and has a fantastic distillation technique that involves using a whole chicken breast suspended in the still. This is to balance out the flavour of the Mezcal and to stop it becoming too fruit dominated.
