Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks which are left a little dirty so that the bacteria and yeast left behind enhances the next spirit.

Lhotse Challenge 2023:

This extraordinarily rare marriage of three different cask types has been created by the Bimber team in support of Philip Pinchin's Lhotse Challenge. In April and May of 2023 Philip will attempt to climb Lhotse (8516m) the fourth highest mountain in the world for the medical charity Cobalt.

One of only three bottles released, this charity lot also features a one of a kind miniature which contains the whisky which set the record for the world's highest single malt in 2023. This whisky includes some of Bimber's oldest and finest stock and features a hand painted artist label.

The seller is kindly donating all of the proceeds to Cobalt.
