The Lost Distillery Company was created to attempt the re-creation of the flavour and style of historical distilleries that have not existed for almost a century in order to show respect for the ancestors of the whisky world. The process begins with an archiving team led by Professor Michael Moss at the University of Glasgow who identify the characteristics of the ten key components they look for in long lost whiskies. Those components include: era, locality, water, barley, yeast, peat, mash tun, wash back, still, and wood.They can then create a blend of single malts from different distilleries to create a spirit resembling the one described in the archives.

The Gerston Distillery which operated from 1796-1882 and, to some extent, Gerston Two from 1886-1914.
