Proudly celebrating his family’s roots in moonshine production - and even using the Polish word for moonshine, ‘Bimber’ - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using their own designed wooden washbacks which are left a little dirty so that the bacteria and yeast left behind enhances the next spirit.
For The Spirit of the Underground Collection, Bimber’s team have selected from their finest whisky casks. Produced with consummate skill and an unwavering commitment to quality, each release celebrates a different station on London’s Underground network and presents a unique piece of the city’s history.
