Bonnington distillery was completed in December 2019. In 2018 a small pilot distillery was opened in nearby Granton Called Chain Pier. Producing just one cask per week, the owners experimented with various different malts, yeast strains, fermentation times and cut points before commencing production at Bonnington. Construction on the distillery was delayed by one year as, when excavating for the new site, archeologists discovered the remains of an old distillery dating back to the 1700’s.
The first distillation took place in March 2020. With Holyrood Distillery opening and construction of the Port of Leith Distillery now completed, Edinburgh is well and truly asserting its rightful place back on the Scotch whisky map.
