Considering its historical importance, Lindores Abbey distillery in Newburugh, Fife, has been built as an aesthetically sympathetic monument to the 800-year-old Tironensian structure, using local wood from Denmylne and stone from Clatchard Quarry. In 2017, spirit started flowing once again from copper stills at Lindores Abbey Distillery, and the first single malt whisky was released in 2021. Lindores’ whisky is a typical light, lowland style spirit.
The earliest written reference to Scotch Whisky appears in the Exchequer Roll of 1494, commissioning Friar John Cor, a Lindores Tironensian monk, to turn 8 bolls of malt into Aqua Vitae for King James IV.
