The words ‘passion’ and ‘enthusiasm’ are thrown around a lot in the origin stories of whisky makers, but it would be hard to find two people more passionate and enthusiastic about the craft than Ian Stirling and Paddy Fletcher. It started when Ian & Paddy began ‘experimenting’ with whisky production in their back garden. (Their neighbour guessed they were brewing beer, an explanation to which they readily confessed to avoid further questioning).
Established in 2017, Port of Leith Distillery is situated just a stone’s throw from the docks where for many centuries, a vast array of goods came in and out of Scotland.
The nine-storey building demands a gravity-led whisky production process which, in turn, will provide visitors with a distillery experience unlike any other; from the mashtun on the fifth floor to the washbacks on the third, visitors will follow the whisky all the way to the gleaming copper stills at ground level.
