Founded in 2019 by David Robertson (an ex Macallan master distiller) along with Rob and Kelly Carpenter, Holyrood is the first whisky distillery to open up in Edinburgh in almost 100 years. The distillery exists to create outstanding spirits that reflect positively on the city of Edinburgh. Holyrood takes inspiration from the distillery’s surroundings and the city’s rich brewing heritage, exploring the many recipes, malts and fermentation ideas that have been left behind. They have a very clear four-worded whisky mindset at Holyrood: Test, Learn, Improve, Repeat.
