Michel Couvreur is originally from Belgium, and moved to England in 1956 and then to Scotland in 1964, where he became involved with whisky production using traditional methods including the use of Sherry casks for maturation. He became a bit disheartened to see the industry change, and moved to France in the 1970s, where he dug his own cellars in the hillsides of Bouze-les-Beaune. This area is about halfway between the Andalusian vineyards and the Scottish Highlands; it is here that Couvreur matures his whisky—which is made in Scotland before being transported to France—in Pedro Ximenez and Palomino Sherry casks.
