The first sugar mill was erected in Suva in 1872 and in the following years, nine more were up and running meaning that the Colonial Sugar Refining Company (CSR) was required to extend its operations to Fiji. However, fortunes slowly dropped away until the end of the 1970s when the survivors spawned the only distillery on Fiji; the South Pacific Distillery. They operate both column and pot stills, with the latter acquired from the Willowbank whisky distillery in New Zealand. The rich volcanic soils mean that most of the sugar cane can be grown organically and the heat and humidity mean the ageing process is accelerated leading to complex flavours.
